According to the USDA (U.S. Dept of Agriculture), eggs today have as much as 64% more Vitamin D than they did just nine years ago. While the exact reason(s) for this remain unknown, it is suspected that significant improvements in the quality of the feed given to the animals is responsible for the healthier egg.
